1. Gooseberry jam with sugar
The classic five-minute recipe for beginners and experienced chefs.
You will need: 600 g gooseberries, 500 g sugar, 100 ml water.
Preparation: Pour half the sugar in the gooseberry and let it sit for an hour. Pour in water, bring to a boil, add the remaining sugar, stir and boil for 5 minutes. Let the jam cool and boil for another 5 minutes twice, and then roll up.
2. Thick gooseberry jam
The density of the jam can be varied depending on the cooking time.
You will need: 1 kg of gooseberries, 1 kg of sugar.
Preparation: Cut the gooseberries into halves, add sugar and leave overnight. Bring to a boil, boil for 5 minutes and cool to the end. Boil the jam again for 5-7 minutes and pour it into the jars.
3. Jam with gooseberry and lemon
We recommend using green gooseberries for this recipe.
You will need: 2 kg of gooseberries, 1 lemon, 1.5 kg of sugar, 50 ml of water.
Preparation: Mix gooseberries with sugar and water and leave for an hour. Add finely chopped lemon with zest, boil the jam over medium heat for 15-20 minutes and roll up.
4. Sugar-free gooseberry jam
You can add a couple of tablespoons of honey if you wish.
You will need: 1 kg of gooseberries.
Preparation: Chop the gooseberries in a blender and leave for 2 hours, stirring occasionally. Place the jam in sterilized jars.
5. Gooseberry jam with orange
We chose the most successful recipe among a dozen options!
You will need: 1 kg of gooseberries, 2 oranges, 1 kg of sugar.
Preparation: Mince the gooseberry and orange along with the peel. Add sugar, stir the mixture, bring to a boil and boil for 20 minutes, and then pour the jam into the jars.
6. Jam with gooseberries and honey
It will be even better if you use brown sugar.
You will need: 500 g gooseberries, 500 g sugar, 100 g honey, 2 cinnamon sticks, 7 cloves, a pinch of salt.

You will need: 1.5 kg of gooseberries, 1.5 kg of sugar, 20 cherry leaves, 2 glasses of water.
Preparation: Mix gooseberries with cherry leaves, cover with water and leave overnight. Drain the liquid, add sugar and bring the syrup to a boil. Send a berry and some leaves into it, stir and remove from heat. Leave the workpiece for 2 hours, bring to a boil, and remove from heat again. Boil the jam as many times as needed to the desired consistency.
9. Gooseberry jam with walnuts
Think tender gooseberries don't go well with hard nuts? Try it!
You will need: 500 g gooseberries, 250 g walnuts, 700 g sugar, 500 ml water, 1 star anise star.
Preparation: Gently tear off the stalks from the gooseberry and put a piece of nut in each, and during this time, cook the syrup from water and sugar. Pour the syrup over the berries, leave overnight, and in the morning add the star anise and bring to a boil. Pour the jam into the jars.
10. Jam with gooseberries and mint
Thanks to mint, the taste changes so much that it is difficult even to immediately identify a gooseberry.
You will need: 1 kg of gooseberries, 1 bunch of mint, 1 kg of sugar, 2 glasses of water, 1 tsp. citric acid.
Preparation: Mix water with sugar and boil the syrup until dissolved. Pour in the gooseberries with mint and leave under the lid overnight. Remove the mint sprigs from the jam, bring it to a boil and roll up.
11. Gooseberry jam with raspberries
This gooseberry jam will appeal to even the most capricious children and demanding adults.
You will need: 700 g gooseberries, 300 g raspberries, 500 g sugar.
Preparation: Add sugar to the gooseberry and leave for 2 hours. Grind raspberries in a blender and pour over gooseberries with this puree. Bring the mass to a boil, boil for 5-7 minutes and put in jars.
12. Gooseberry jam with lemon balm
If you want a thick jam, add a little gelatin or pectin.
You will need: 1 kg of gooseberries, 0.5 lemon, 800 g of sugar, 3 sprigs of lemon balm.
