1. The classic recipe for compote with cherries
Pour salt water over the cherries for half an hour and then rinse twice.
You will need: 1 kg of cherries, 2.5 liters of water, 1 glass of sugar.
Preparation: Boil water, pour in washed cherries and cook for 5 minutes after boiling. Remove the compote from the heat, add sugar and leave under the lid until it cools completely.
2. Cherry compote with citric acid
You can also use just lemon juice.
You will need: 700 g of cherries, a pinch of citric acid, 150 g of sugar, 2 liters of water.
Preparation: Rinse the cherries and pour into boiling water. Add citric acid after a minute. Boil the compote for 4 minutes, remove from heat, add sugar and cool.
3. Cherry compote with lemon and cinnamon
A cinnamon stick can be replaced with 0.5 tsp. ground product.
You will need: 1 kg of cherries, a slice of lemon, 1 cinnamon stick, 200 g of sugar, 2.5 liters of water.
Preparation: Boil water, add cinnamon and lemon. After 5 minutes, pour in the washed cherries and continue to cook after boiling for another 4 minutes. Add cinnamon, sugar and turn it off. Insist the compote under the lid for half an hour.
4. Compote with cherries and cherry juice
You can buy cherry juice at the store or make your own.
You will need: 1 kg of cherries, 1 glass of cherry juice, 1 glass of sugar, 1 tsp. lemon juice, 3 liters of water.
Preparation: Boil water and juice for 5 minutes, add washed cherries, citric acid and cook for another 5 minutes. Turn off, add sugar, stir and cool.
5. Compote with cherries and strawberries
Sweet and aromatic compote for the whole family!
You will need: 1 kg of cherries, 300 g of strawberries, 1 glass of sugar, a pinch of citric acid, 3 liters of water.
Preparation: Bring the water to a boil, add the washed berries and cook for 7 minutes. Add citric acid, boil for 3 minutes and turn off. Add sugar and cover the compote with a lid for half an hour.
6. Compote with cherries and apricots
It is not necessary to remove pits from apricots.
You will need: 1 kg of cherries, 500 g of apricots, 200 g of sugar, a pinch of citric acid, 3 liters of water.
Preparation: Boil water, add apricots and cook for 5 minutes. Pour in cherries, citric acid and boil for another 5 minutes. Turn off, add sugar and cool.
7. Cherry and mint compote
Do not keep the mint in the compote for more than an hour, otherwise bitterness will appear.
You will need: 800 g of cherries, 3 sprigs of mint, 200 g of sugar, 1 tsp. lemon juice, 2.5 liters of water.
Preparation: Add prepared mint and cherries to boiling water. After 2 minutes, pour in the lemon juice and boil for 6 minutes. Turn it off, add sugar and cool.
8. Cherry compote with lemon
Rinse the lemon thoroughly with boiling water before cooking the compote!
You will need: 1 kg of cherries, half a lemon, 250 g of sugar, 3 liters of water.
Preparation: Rinse the cherries, scald the lemon with boiling water and cut with the peel. Boil water, add lemon, cherries and boil for 8 minutes. Turn off, add sugar and leave covered for 30-40 minutes.
9. Saturated cherry and apple compote
Apples of any variety are suitable for your taste.
You will need: 1 kg of cherries, 400 g of apples, 200 g of sugar, a pinch of citric acid, 2 liters of water.
Preparation: Add cherries and chopped apples to boiling water. Boil for 2 minutes, add citric acid and continue cooking for another 5 minutes. Turn off, add sugar and leave under the lid.
10. Cherry compote with berries and raspberry leaves
Tie the fragrant leaves to make it easier to catch them later.
You will need: 2 liters of water, 500 g of cherries, 1 glass of raspberries, 5 raspberry leaves, 1 tsp. citric acid, 150 g granulated sugar.
Preparation: Rinse the cherries, raspberries and leaves. Boil water, add berries and boil for 3 minutes. Add citric acid, raspberry leaves and continue to cook the compote for another 4 minutes.Remove from heat, add sugar and cool.
11. Compote with cherries, currants and raspberries
Currants and raspberries can be pre-kneaded in a mortar or chopped in a blender.
You will need: 2.5 liters of water, 500 g of cherries, 1 glass of raspberries, 1 glass of currants, 180 g of sugar, 1 tsp. lemon juice.
Preparation: Bring water to a boil, add washed berries and cook for 5 minutes. Add lemon juice and turn it off after 2 minutes. Add sugar, stir and cover until it cools completely.
12. Cherry and plum compote
Cut large plums into four parts, and throw small ones whole.
You will need: 1 kg of cherries, 400 g of plums, 1 glass of sugar, a slice of lemon, 3 liters of water.
Preparation: Boil water, pour in prepared plums, cook for 5 minutes. Add cherries, lemon juice and boil the compote for another 5 minutes. Turn off, add sugar and leave under the lid for half an hour.
13. Cherry and rhubarb compote
With the indicated amount of sugar, the compote will turn out to be slightly sour.
You will need: 2 liters of water, 500 g of cherries, 200 g of rhubarb, 5 tbsp. l. Sahara.
Preparation: Rinse the cherries, rhubarb, peel and cut. Boil water with sugar, add cherries, rhubarb and simmer for 10 minutes. Turn off and cover for an hour.
14. Cherry compote with oranges
Serve chilled compote with ice and orange slices.
You will need: 500 g cherries, 2 oranges, 1 tsp. lemon juice, 150 g granulated sugar, 2.5 liters of water.
Preparation: Rinse the cherries, scald the oranges with boiling water and cut into pieces with the peel. Boil water, add oranges, cherries and cook for 5 minutes. Add lemon juice and turn it off after 3 minutes. Add sugar and leave for about half an hour.
15. Compote with cherries, cinnamon and star anise
An excellent recipe for lovers of aromatic summer drinks.
You will need: 2 liters of water, 600 g of cherries, 2 star anise stars, 1 cinnamon stick, 1 bag of vanilla sugar, 1 allspice pea, 3 tbsp. sugar, a pinch of citric acid.
Preparation: Boil water, add star anise, cinnamon, allspice and boil everything for 10 minutes. Add washed cherries, vanilla sugar, citric acid and cook for another 7 minutes. Turn it off, add sugar and cover for half an hour.
16. Sweet cherry and basil compote
Basil saturates the compote with original aroma and useful substances.
You will need: 2 liters of water, 600 g of cherries, 30 g of purple basil, 150 g of sugar, a slice of lemon.
Preparation: Boil basil sprigs for 5 minutes, add cherries and boil for another 5 minutes after boiling. Squeeze out the lemon juice, add sugar and turn off after 2 minutes. Insist the compote for half an hour, strain and cool.
17. Compote with cherries and dogwood
Such compote invigorates well and quenches thirst in summer!
You will need: 1.5 l of water, 400 g of cherries, 1 cup of dogwood, a pinch of citric acid, 150 g of sugar.
Preparation: Boil the dogwood for 5 minutes, add the cherries, citric acid and cook for another 5 minutes. Remove from heat, add sugar and leave covered for 40 minutes.
18. Compote with cherries and cherry jam

You will need: 2 l of water, 500 g of cherries, 3 tbsp. cherry jam, 150 g of sugar.
Preparation: Boil water, add jam and pour in cherries. Boil for 5 minutes after boiling, add sugar and remove from heat. Insist half an hour under the lid, before serving, strain.
19. Sweet cherry compote in a slow cooker
You can cook compote in a multicooker on the "Cooking" and "Soup" modes.
You will need: 1 kg of cherries, 250 g of sugar, vanillin on the tip of a knife, 3 liters of water.
Preparation: Pour washed cherries and vanillin into the multicooker bowl, cover with a lid and cook on the Soup program for 10 minutes. Cool under the lid, add sugar and stir.
20. Cherry compote for the winter

You will need: 1 kg of cherries, a glass of sugar, 0.5 tsp. citric acid, 3 liters of water.
