Satsivi is a classic Georgian sauce, and the same is the name for a ready-made dish with it. It pairs best with poultry, so today we'll show you how to make chicken satsivi. Collected only proven recipes!
1. Georgian Satsivi with whole chicken
A classic recipe with a classic set of spices.
You will need: 1.5 kg of chicken, 2 bay leaves, 1 red onion, 3 onions, 10 black peppercorns, 4 allspice peas, 10 g parsley stalks, 2.5 liters of water, 2 tsp. salt, 2 tbsp. vegetable oil, 50 g of cilantro, 6 cloves of garlic, 450 g of walnuts, 4 tsp. saffron, 6 tsp hops-suneli, 1 tsp each chili and coriander, a pinch of black pepper, 3 tbsp. red wine vinegar.
Preparation:
1. Cover the chicken with water, bring to a boil and remove the foam. Add the peppercorns, a whole red onion, half the salt and parsley stalks, and cook over low heat for 40 minutes. Add bay leaves and boil for another 10 minutes.
2. Pass through a meat grinder or beat in a blender cilantro, garlic and walnuts.
3. Grate the onion and fry in oil for 4-5 minutes over low heat.
4. Transfer the onion to a casserole and pour in 1.5 liters of chicken broth. Mix thoroughly to the desired consistency, add all the spices, vinegar, and mix again.
5. Boil the satsivi sauce lightly, without bringing it to a boil, and pour it on the boiled chicken fillet, which has been taken apart.
2. Georgian Satsivi with paprika
For a richer taste and aroma, we recommend using smoked paprika.
You will need: 1 chicken, 2 carrots, 2 onions, 4 bay leaves, a bunch of herbs, 50 ml of vegetable oil. 300 g walnuts, 1 tablespoon smoked paprika, 1 tsp each coriander, ground cloves, hot pepper and suneli hops, 20 g butter, 1.5 tbsp. flour.
Preparation: Pour water over the chicken, add carrots, quarters of 1 onion, bay leaf and herbs. Boil until tender and divide the meat into pieces. Chop the onion finely and fry it until golden, and then chop in a blender along with the nuts.
Fry the flour in butter, add the nut mass with spices there and mix. Dilute the satsivi with strained broth to the consistency of a sauce, and pour over the chicken.
3. Georgian satsivi with cinnamon
Cinnamon gives very original flavors to both the chicken and the sauce itself.
You will need: 1 chicken, 700 g of walnuts, 5 onions, 4 cloves of garlic, 2 tbsp. wine vinegar, 1 tsp each coriander, suneli hops, pepper and cinnamon.
Preparation: Boil the chicken until tender and divide into portions. Chop the onion finely, fry and stew for 5-7 minutes with a little broth.
Pass the nuts with garlic through a meat grinder, pour the broth into the paste and knead until smooth. Add the onion and vinegar, stir, season and finally bring to the consistency of a sauce and broth. At the end, beat the satsivi with a blender and pour over the chicken.
4. Chicken satsivi with curry
Minimum changes in ingredients - and maximum changes in taste!
You will need: 1 chicken, 500 g walnuts, 3 red onions, 4 cloves of garlic, 1 chili pepper, 2 tbsp. wine vinegar, 1 tbsp. curry, spices.
Preparation: Boil the chicken until tender, strain the broth, and disassemble the meat. Chop the nuts and garlic in a blender, and the grated onion and lightly fry. Mix them, add vinegar and spices, and bring to the desired consistency with warm broth. Pour the sauce over the chicken.
5. Chicken satsivi with mushrooms
Forest mushrooms are best suited here, but with champignons it works well too.
You will need: 500 g of chicken, 500 g of mushrooms, 2 onions, 100 g of herbs, 200 g of walnuts, 4 cloves of garlic, 1 hot pepper, 1 tbsp. wine vinegar, 1 tbsp. olive oil, spices.
Preparation: Chop the mushrooms coarsely and fry until tender. Separately fry the chicken sliced in portions and put everything in one container.Grind the nuts, garlic and onions fried until golden in a blender.
Add wine vinegar and spices, and dilute the sauce with water until it becomes thick sour cream. Add chopped greens and chopped hot peppers, pour the sauce over the chicken with mushrooms and stir the satsivi.
6. Chicken satsivi with peanuts
We offer an original recipe for satsivi with peanuts instead of walnuts.
You will need: 800 g chicken, 2 onions, 330 g peanuts, 1 tablespoon each. butter and pomegranate juice, spices, 4 cloves of garlic.
Preparation: Boil chicken with spices and half an onion until tender. Take it apart into portions and fry in butter until golden brown.
Finely chop and fry the onion, and chop the nuts with garlic and spices in a blender. Mix them together, pour in pomegranate juice and about 500 ml of broth, and simmer for 15-20 minutes over low heat. Place the chicken in the satsivi.
7. Georgian Satsivi with eggplant
What is Georgian cuisine without eggplant?
You will need: 500 g of chicken, 3 eggplants, 200 g of walnuts, 1 hot pepper, 4 cloves of garlic, 30 ml of wine vinegar, 3 onions, 1 bunch of cilantro, 1 bunch of basil, spices.
Preparation: Cut the chicken into large pieces and fry until half cooked. Add to it large cubes of eggplant and stew all together until the vegetables are soft.
Finely chop and fry the onion, then chop it in a blender with nuts and garlic. Add vinegar and spices to the sauce, dilute with water to a comfortable consistency and pour in the chicken with eggplant. Stew everything together for a couple of minutes and sprinkle with chopped cilantro and basil.
8. Satsivi with chicken and pomegranate juice
Pomegranate is often used in Georgian cuisine, so this is quite a classic combination.
You will need: 1 chicken, 2 onions, 200 ml of pomegranate juice, half a pomegranate grain, 100 g of walnuts, 3 cloves of garlic, spices, cilantro.
Preparation: Cut the chicken into portions and fry in a cast-iron cauldron until half cooked. Add finely chopped onions there, and simmer for half an hour under a lid over low heat.
Grind nuts with garlic in a blender, add spices and dilute with pomegranate juice. Pour the sauce into the chicken and add some water as needed. Stir the dish, simmer for another 10 minutes, and sprinkle with pomegranate seeds and chopped cilantro.
9. Georgian fried chicken satsivi
This is a kind of express recipe for which chicken fillet or drumsticks are perfect.
You will need: 600 g chicken, 200 g walnuts, 4 cloves of garlic, 2 tbsp. olive oil, 2 onions, spices.
Preparation: Cut the chicken into portions and fry until tender. Separately chop and fry the onions and chop them in a walnut and garlic blender. Season the mixture and bring to the desired consistency with boiled water. Heat the sauce slightly over the fire and pour over the chicken.
10. Satsivi with chicken and vegetables
A complete main course that does not need a side dish.
You will need: 500 g chicken, 1 eggplant, 1 onion, 1 pepper, 1 head of cauliflower, 200 g green beans, 400 g walnuts, 6 cloves of garlic, 6 tbsp. vegetable oil, 1 tbsp. vinegar, spices.
Preparation: Boil cauliflower inflorescences for 20 minutes, and boil the beans separately. Coarsely chop the rest of the vegetables, drizzle with oil, put on a baking sheet in one layer and bake for 20 minutes at 200 degrees. Boil the chicken until tender and disassemble it into pieces.
Whisk the garlic and walnuts in a blender, add the spices, and mix well. Add vinegar there and gradually pour the broth into the dry mass, stirring, until the consistency of a thick sauce. Pour in the vegetables with the satsivi chicken and stir.
