Add seasoning, chopped potatoes, tomatoes, hot peppers and cook for another 5 minutes. Pour hot water over everything and cook for 40 minutes. Salt, sprinkle shurpa with chopped garlic and herbs.
2. Shurpa with lamb in Tatar style
Served with lavash and fresh herbs.
You will need: 2.5 liters of water, 800 g of lamb on the bone, 3 onions, 4 potatoes, 2 sweet peppers, 2 tomatoes, 0.5 tsp. coriander beans, 4 allspice and black peppercorns, 2 bay leaves, 15 g of salt, herbs.
Preparation: Boil the meat with bay leaves for 1.5 hours, remove and cut. Strain the broth, add coarsely chopped potatoes, carrots and cook for 10 minutes. Add lamb, spices, chopped tomatoes and bell peppers. Boil the shurpa for 7 minutes, sprinkle with herbs, chopped onions and salt.
3. Lamb kaitnam shurpa
The dish is prepared without preliminary frying of meat and vegetables.
You will need: 3 liters of water, 1 kg of lamb, 350 g of potatoes, 2 sweet peppers, 3 onions, 300 g of tomato, 2 carrots, 3 cloves of garlic, half a bunch of herbs, 0.5 tsp. cumin, salt and ground black pepper to taste.
Preparation: Boil the lamb in salted water for 1.5 hours. Chop vegetables into large pieces, chop herbs and garlic. Add potatoes and carrots to a saucepan, after 10 minutes add tomatoes, bell peppers, onions and spices. Protomi 8 minutes, salt, sprinkle with herbs, garlic and turn off.
4. Lamb shurpa with radish
Serve in deep bowls.
You will need: 800 g of lamb, 3 potatoes, 2 tomatoes, 2 onions, 1 carrot, 2 bell peppers, 300 g of radish, 50 ml of vegetable oil, 3 bay leaves, 3 cloves of garlic, 5 black peppercorns, 0.5 tsp. hops-suneli, 2 tsp salt, herbs, 2.5 liters of water.
Preparation: Chop the meat and boil for 1 hour with black pepper and bay leaves. Chop the vegetables. Add potatoes, carrots and boil for 10 minutes. Fry the onions and carrots until golden brown and pour into the shurpa. After 10 minutes, add the radish, tomatoes and garlic. Boil for 5 minutes, sprinkle with herbs and salt.
5. Caucasian style lamb shurpa
Add lemon when serving.
You will need: 1 kg of lamb, 3 apples, 2 sweet peppers, 3 tomatoes, 2 onions, 1 carrot, 350 g of potatoes, hot pepper pod, 0.5 tsp. cumin, 0.5 tsp. ground coriander, 15 g of salt, half a bunch of cilantro, 3 liters of water.
Preparation: Fry the meat until golden brown, add spices, chopped onions, carrots and stew for 5 minutes. Pour hot water over everything, add whole apples and cook for 15 minutes. Add potato cubes, chopped tomatoes, sweet and hot peppers. After 10 minutes, catch the apples and discard. Salt the shurpa, sprinkle with finely chopped cilantro and turn it off.
6. Shurpa with chickpeas and lamb
Pre-soak the chickpeas for an hour.
You will need: 2.5 liters of water, 800 g of lamb, 150 g of chickpeas, 2 onions, 1 carrot, 2 tbsp. tomato paste, 3 potatoes, 2 bell peppers, 3 tbsp. vegetable oil, herbs, 15 g of salt, 0.5 tsp. coriander beans, 3 allspice peas, a pinch of ground black pepper.
Preparation: Pour chickpeas, lamb, peppercorns with cold water and boil for 1.5 hours. Pour in the chopped potatoes. Chop the onion with carrots and fry until golden brown, add chopped bell pepper, tomato paste, a little water and cook, stirring for 5 minutes. Pour the frying into the shurpa, add salt, herbs and spices.Boil and remove from heat.
7. Lamb shurpa with apricots
In the absence of apricots, you can use the same amount of dried apricots.
You will need: 2 liters of water, 700 g of lamb, 150 g of apricots, 2 sweet peppers, 1 tomato, 300 g of potatoes, 1 carrot, 2 onions, 50 ml of vegetable oil, 2 bay leaves, cumin, hops-suneli, ground paprika, 1.5 tsp salt, half a bunch of parsley.
Preparation: Boil the lamb with bay leaf for 1.5 hours. Add diced potatoes and apricots. Fry chopped onions and carrots in a pan, add spices, chopped tomatoes, bell peppers and sweat for 5 minutes. Pour the frying into the shurpa. After 10 minutes, salt, add parsley and turn off.
8. Turkish shurpa with vegetables and lamb
The Turkish version of shurpa cooking is distinguished by an abundance of vegetables.
You will need: 2.5 liters of water, 700 g of lamb on the bone, 4 potatoes, 3 sweet peppers, 2 carrots, 2 onions, 2 heads of garlic, 1.5 tbsp. salt, 5 stalks of cilantro and parsley.
Preparation: Boil the lamb for 1.5 hours, remove, cut and return to the pan. Add chopped potatoes, carrots and bell peppers. Throw whole heads of garlic into the shurpa. After 10 minutes, add half a ring of onion, salt. Sweat 5 minutes, sprinkle with chopped herbs, turn off.
9. Nukhut lamb shurpa
Chop vegetables into large chunks to preserve their flavor better.
You will need: 2.5 liters of water, 1 kg of lamb, 1.5 cups of chickpeas, 3 potatoes, 1 carrot, 2 onions, 300 g of cabbage, 2 bell peppers, 100 ml of tomato juice, 2 tomatoes, 3 bay leaves, 0.5 tsp. l. cumin, 3 black and allspice peas, 2 tsp. salt, 50ml vegetable oil, herbs.
Preparation: Soak the chickpeas for 2 hours. Fry the lamb over high heat with onions and spices. Pour in hot water, add chickpeas, tomato juice and cook for 50 minutes. Pour in the chopped potatoes, bell peppers, tomatoes and carrots. After 5 minutes, add the chopped cabbage. At the end, sprinkle with herbs and turn off.
10. Shurpa with lamb in Turkic
Cook in a cauldron with a thick bottom.
You need: 700 g lamb, 2 onions, 1 carrot, 3 sweet peppers, 300 g daikon, 100 ml tomato puree, 3 potatoes, 3 cloves of garlic, cumin, ground black pepper, herbs, 1.5 tsp. salt, 2.5 liters of water.
Preparation: Cut the lamb into large pieces and fry. Pour in chopped onions, carrots and bell peppers. After 5 minutes, add tomato puree and spices. Squeeze out the garlic and cook, stirring for 10 minutes. Pour everything in hot water and boil for 20 minutes. Add the potato and daikon cubes. After 10 minutes, salt and sprinkle with finely chopped herbs.
11. Spicy mutton shurpa
If you don't like very hot, you can use less hot pepper. It will turn out to be no less tasty!
You will need: 3 liters of water, 1 kg of lamb, 4 potatoes, 1 hot pepper, 2 bell peppers, 3 tomatoes, 2 onions, 1 carrot, 3 cloves of garlic, half a bunch of greens, 3 bay leaves, cumin, coriander beans, salt.
Preparation: Boil the meat with spices for 1.5 hours in salted water. Add the diced potatoes. Fry chopped onions and carrots until golden brown, add chopped tomatoes, sweet and hot peppers. Stew for 10 minutes and pour into a saucepan. After 5 minutes, salt, add herbs, garlic and turn off.
12. Shurpa with zucchini and lamb
Serve with pita bread and spicy adjika.
You will need: 3 liters of water, 1 kg of lamb, 2 young zucchini, 300 g of potatoes, 1 carrot, 2 onions, 2 tomatoes, 2 bell peppers, 0.5 tsp. cumin, 3 bay leaves, 5 black peppercorns, 2 tsp. salt, cilantro.
Preparation: Boil the lamb with bay leaf for 1.5 hours. Add potato cubes and coarsely chopped carrots. After 10 minutes, add chopped tomatoes, onions and zucchini. Sprinkle with spices, salt and boil for 5 minutes. Add finely chopped greens before turning off.
13. Lamb shurpa with corn
You can cut the kernels from young cobs or use canned corn.
You will need: 800 g lamb, 300 g corn, 2 cloves of garlic, 1 hot pepper, 2 onions, 1 carrot, 2 sweet peppers, 3 potatoes, 3 allspice and black peppercorns, 20 g salt, cumin, 2.5 liters of water.
Preparation: Cut the lamb and boil it for an hour with spices. Add hot peppers, chopped carrots and potatoes. After 10 minutes, add corn, chopped onions and garlic. Boil the shurpa for 7 minutes, salt and turn it off.
14. Shurpa on lamb ribs
Choose thin ribs with fat.
You will need: 1 kg of lamb ribs, 3 onions, 1 carrot, 2 bell peppers, 4 potatoes, 3 bay leaves, 0.5 tsp. cumin, herbs, 25 g of salt, 3 liters of water.
Preparation: Pour ribs with cold water, add bay leaf, salt and boil for 1 hour. Cut the vegetables into large pieces. Add potatoes and carrots to the shurpa, after 15 minutes add bell peppers and onions. Salt, sprinkle with herbs, turn off and cover for 10 minutes.
15. Lamb shurpa "Original"
Lemon juice makes shurpa taste delicious!
You will need: 800 g lamb, half a lemon, 300 g potatoes, 2 sprigs of cherry tomatoes, 2 bell peppers, 1 carrot, 3 onions, 40 ml of olive oil, 3 cloves of garlic, 0.5 tsp. cumin, 0.5 tsp. hops-suneli, 20 g of salt, herbs to taste.
Preparation: Boil the meat until tender in salted water with spices. Add potato cubes and carrots cut in half. Fry chopped onion and garlic until golden brown, add the tomato halves and pour into the shurpa. Squeeze out lemon juice, salt and add spices. After 5 minutes, remove from heat and add chopped greens.
16. Shurpa with noodles and lamb
You can use homemade or cooked noodles.
You will need: 800 g lamb, 150 g noodles, 2 onions, 300 g potatoes, 1 carrot, 2 tbsp. tomato paste, 3 bell peppers, 4 cloves of garlic, 3 tbsp. vegetable oil, cumin, ground black pepper, salt and herbs, 2.5 liters of water.
Preparation: Boil the lamb in salted water with spices for 1.5 hours. Chop vegetables, chop garlic and herbs. Fry onions and carrots until golden brown, add bell pepper, tomato paste, a little water and simmer for 10 minutes. Pour the frying into the shurpa, add the noodles and cook for 10 minutes. At the end, sprinkle with garlic, herbs and salt.
17. Rice lamb shurpa
Cooking shurpa with rice is not at all difficult, as it seems at first glance.
You will need: 3 liters of water, 1 kg of lamb on the bone, 150 g of rice, 4 potatoes, 1 carrot, 3 onions, 4 cloves of garlic, 2 tomatoes, half a bunch of cilantro, 3 allspice peas, 0.5 tsp. cumin, 1.5 tbsp. coarse salt.
Preparation: Cut the lamb into large pieces and lightly fry. Add spices, chopped onions and carrots. After 5 minutes, add chopped tomatoes. Pour everything in hot water and boil for 20 minutes. Add rice and potato cubes. After 10 minutes, squeeze the garlic through a press, salt and sprinkle with finely chopped cilantro.
18. Shurpa with bulgur and lamb
After preparing the shurpa, it must be infused for 15 minutes.
You will need: 2.5 l of water, 800 g of lamb tenderloin, 150 g of bulgur, 2 onions, 1 carrot, 350 g of potatoes, 2 sweet peppers, 3 tomatoes, 50 ml of vegetable oil, 0.5 tsp. cumin, 0.5 tsp. coriander beans, 20 g of salt.
Preparation: Boil lamb in salted water for 1 hour. Fry chopped onions and carrots until golden brown, add bulgur and cook for another 10 minutes, stirring constantly. Add the roast to the pan and boil for 10 minutes. Add potato cubes, coarsely chopped peppers and tomatoes. After 12 minutes, salt and turn off.
19. Shurpa with lamb meatballs
It is convenient and easiest to shape the meatballs with a spoon.
You will need: 2 liters of broth, 500 g of minced lamb, 1 onion, 1 carrot, 2 bell peppers, 350 g of potatoes, 1 tomato, 1 tbsp. tomato paste, half a bunch of parsley, 0.5 tsp. coriander beans, 2 tsp. salt, ground black pepper to taste.
Preparation: Combine the minced lamb, one chopped onion, salt and black pepper. Shape the meatballs.
Pour spices, chopped potatoes, carrots and bell peppers into the boiling broth. After 10 minutes, add the meatballs, tomato paste and finely chopped onion. Pot the shurpa for 12 minutes, add salt and chopped parsley.
20. Shurpa with lamb and fat tail fat
It is believed that real shurpa is cooked exclusively with the addition of a fat tail!
You will need: 2.7 liters of water, 800 g of lamb, 150 g of fat tail fat, 3 potatoes, 2 sweet peppers, 1 carrot, 1 tomato, 2 onions, 3 bay leaves, 4 allspice and black peppercorns, 10 g cumin, 15 g salt, dill and cilantro.
Preparation: Cut lard and fry. Add lamb and brown for 10 minutes. Pour in the spices, chopped onions, carrots, tomatoes and bell peppers.
