It's also a clever way to get kids to eat a valuable vegetable that turns up their noses all the time. Therefore, we are sharing with you 12 delicious carrot cake recipes!
1. Classic carrot cake in the oven
For starters, we offer a classic recipe for carrot cake, which you can complement with anything!
You will need: 200 g carrots, 3 eggs, 180 g sugar, 200 g flour, 1 tsp. baking powder, 1 tsp. cinnamon, 150 ml of vegetable oil.
Preparation: Beat eggs and sugar until frothy, add butter and beat a little more. Mix with grated carrots, and at the end add sifted flour with baking powder and cinnamon. Bake the carrot cake for 40 minutes in the oven at 180 degrees.
2. Carrot cake in a slow cooker
For a carrot cake to come out tasty and tender, you do not have to waste time on the oven!
You will need: 500 g carrots, 1.5 tbsp. butter, 1 cup sugar, 4 eggs, 1 cup flour, 1 tsp. baking powder, a pinch of salt.
Preparation: Chop the carrots, melt the butter and separate the yolks from the whites. Mix the yolks with sugar until fluffy, and whites and salt until they peak. Add softened butter and carrots to the yolk, mix and add dry ingredients.
Slowly pour in and stir in the egg whites with a spatula to keep the carrot cake light and fluffy. Cook for an hour in baking mode, and then leave the cake to stand in a slow cooker under the lid for another 20 minutes.
3. Carrot cake without eggs
If the eggs just run out at home, this is not a reason to deny yourself the pleasure of baking a carrot cake. Get the recipe!
You will need: 1 carrot, 4 tablespoons sugar, 1 lemon, 70 g butter, 2 tbsp. sour cream, 220 g flour, 0.5 cups of walnuts, 2 tbsp. honey, a pinch of soda.
Preparation: Finely grate the carrots and mix them with sugar, softened butter, honey, grated lemon zest and sour cream. Add sifted flour and baking soda, mix, and at the end add chopped nuts. Bake the cake in the oven for 30 minutes at 180 degrees.
4. Gluten Free Carrot Cake
Wheat flour is by no means a mandatory attribute of a carrot cake recipe!
You will need: 160 g carrots, 70 g rice flour, 3 eggs, 1 tsp. baking powder, 1 tbsp. vegetable oil, 100 g of dried fruits and nuts, a sweetener.
Preparation: Grind the yolks with grated carrots, flour, baking powder and vegetable oil. Add chopped dried fruits there, and then beat the whites separately and slowly add them into the mixture. According to the recipe, this carrot cake is baked for about 50 minutes: 20 minutes at 180 and 30 minutes at 160 degrees.
5. Sugar-free carrot cake
If you don't eat sugar at all, then we have found for you a recipe for a carrot cake without it at all!
You will need: 100 g carrots, 2 eggs, 4 tablespoons. oatmeal, 3 tablespoons oat bran, 4 tablespoons kefir, a pinch of soda, dried apricots, coconut flakes, sweetener.
Preparation: Grate the carrots on a fine grater, and grind the flakes into flour with a blender. Combine oatmeal, bran, carrots, eggs, kefir, sweetener and slaked soda, whisk with a blender. Add chopped dried apricots with coconut and bake in the oven at 180 degrees for 20 minutes.
6. Carrot cake with cream cheese
Carrot cake according to this recipe is suitable both instead of a dessert and instead of the main course.
You will need: 500 g carrots, 250 ml vegetable oil, 180 g brown sugar, 3 eggs, 1 tsp. baking powder, 0.5 tsp. soda, 250 g flour, a pinch of ground ginger, cinnamon, 150 g walnuts, 250 g cream cheese, 60 g powdered sugar, 1 tbsp. lemon juice.
Preparation: Beat eggs with sugar and vegetable oil, and then add sifted flour with baking soda, baking powder and spices. Add grated carrots and chopped nuts to the dough, mix and bake for 50 minutes at 180 degrees.Whisk the cream cheese with lemon juice and powdered sugar and garnish the carrot cake with cream.
7. Carrot cake with cocoa
The cocoa in the recipe harmoniously complements not only classic muffins and biscuits, but even carrot cake!
You will need: 2 carrots, 140 ml of vegetable oil, 3 eggs, 175 g of sugar, 160 g of flour, 1 tbsp. cocoa, 1 tbsp. baking powder.
Preparation: Grate the carrots, sift and mix the flour with cocoa and baking powder, and beat the eggs with sugar. Add vegetable oil to the eggs, then the carrots and dry ingredients in two passes. Stir the dough each time until smooth. Carrot cake is baked for about 40 minutes in the oven at 180 degrees.
8. Carrot cake with pumpkin
Carrots match perfectly with pumpkin in taste, color and aroma, so the cake recipe will only benefit from it!
You will need: 300 g carrots, 250 g pumpkin, 3 eggs, 400 g sugar, 125 ml vegetable oil, 100 g dried apricots, 75 g walnuts, 450 g flour, 2 tsp. baking powder, 1 tsp. soda, cinnamon.
Preparation: Chop the nuts with dried apricots, grate the carrots, cut the pumpkin into cubes, boil and puree it with a blender. Beat eggs with sugar, butter, carrots and pumpkin puree. Add dry ingredients, beat again, and at the end, stir in the nuts with dried apricots. Bake the carrot cake at 180 degrees for 30 minutes.
9. Carrot cake with nuts
Thanks to the presence of nuts in the recipe, the carrot cake turns out to be even healthier and more nutritious!
You will need: 4 carrots, 4 eggs, 250 ml of vegetable oil, 2 cups of flour, 2 cups of sugar, 2 tsp each. baking powder and soda, 2 tsp. cinnamon, 170 g of crushed nuts.
Preparation: Beat eggs with sugar and butter, add flour, baking powder, baking soda and cinnamon. Stir the dough and add the nuts and grated carrots last. Bake the cake for 50 minutes in the oven at 180 degrees.
10. Carrot cake with dried fruits
Carrot cake goes well with raisins, dried apricots, prunes and even candied fruits.
You will need: 2 carrots, 3 eggs, 0.5 cups of sugar, 1 cup flour, 1.5 tsp. baking powder, 1 lemon, 250 g sour cream, dried fruits.
Preparation: Soak dried fruits in warm water, grate carrots and squeeze the juice from them. Beat eggs with sugar until frothy, add carrots, flour, baking powder and chopped dried fruits. Bake the cake for half an hour at 180 degrees, cool and cut in half. Whip the sour cream with grated lemon and spread over the cake layers.
11. Carrot cake with lemon
The lemon peel in the recipe gives the carrot cake a distinct citrus flavor and aroma.
You will need: 2 carrots, 1 lemon, 150 ml of vegetable oil, 260 g of flour, 1 glass of sugar, 3 eggs, 2 tsp. baking powder.
Preparation: Grate the carrots and lemon zest on a fine grater, leave 1 tbsp. lemon juice. Beat eggs with sugar until frothy, combine with lemon, juice, carrots and vegetable oil, and beat again. Add the sifted flour with baking powder and bake in the oven at 180 degrees for 45 minutes.
12. Carrot cake without baking
A very unusual recipe for carrot cake, perfect for raw foodists, vegans and lovers of unusual dishes!
You will need: 500 g carrots, 100 g cashews, 100 g almonds, 200 g dates, 3 tbsp. honey, a bunch of mint, 4 tablespoons. orange peel.
Preparation: Chop the nuts in a blender and combine them with finely chopped dates. Put the nut mass in a cake-shaped mold and press into the freezer for half an hour. Combine grated carrots with honey, chopped mint and zest, and lay out in a second layer. Ready!
