The favorite Italian dessert combines the creamy taste of mascarpone, coffee aroma and notes of cocoa. At first glance, it seems rather complicated, although in its homeland it is a simple and quick cake for a large family. Why not try your hand too? Here are 5 classic homemade tiramisu recipes!
1. Tiramisu from the Italian chef
Author's recipe, very simple and pleasant to prepare!
You will need: 5 eggs, 125 g sugar, 250 g mascarpone, 325 g 30% cream, espresso, 35-40 pieces of savoyardi, cocoa.
Preparation:
1. Beat eggs and sugar with a mixer on high power until they swell.
2. Separately whisk the cold cream and cold mascarpone until fluffy on medium speed. Combine both masses and mix with a spatula.
3. Dip the Savoyardi in a cold espresso, add a layer of cream, and continue to alternate the layers in this way. Refrigerate tiramisu overnight and sprinkle with unsweetened cocoa powder before serving.
2. Alcoholic tiramisu without cream
This recipe has fewer eggs, and the coffee is mixed with wine or liqueur for flavor and aroma.
You will need: 250 g mascarpone, 2 eggs, 5 tbsp. powdered sugar, 200 ml of cold coffee, 100 ml of wine or 2 tbsp. sweet liqueur, 100 g savoyardi.
Preparation:
1. Separate the whites from the yolks and beat separately with 2 and 3 tbsp. powdered sugar, respectively. There should be a nice thick foam.
2. Add mascarpone to the yolks and mix until smooth with a spoon, and then with a mixer. Add the egg whites and mix with a silicone or wooden spatula.
3. Dip the savoyardi in coffee with alcohol for 1-2 seconds and put it in the mold. The next layer is cream, and alternate further. For beauty, sprinkle tiramisu with cocoa and put it in the refrigerator.
3. Quick tiramisu with cream cheese
Although the classic tiramisu recipe goes with mascarpone, you can try other cream cheese as well.
You will need: 200 g savoyardi, 500 g cream cheese, 4 eggs, 100 g sugar, 1 tsp. coffee, 200 ml boiling water, cocoa powder.
Preparation:
1. Separate the whites from the yolks. Beat the whites separately until a firm foam, and rub the yolks with sugar.
2. Add soft cream cheese to the yolks and stir until smooth. Gently add the protein foam and mix with a spatula (not with a mixer!)
3. Quickly dip each cookie in the coffee for 1-2 seconds to keep it from softening. Lay out a layer of cookies, then a layer of cream, and again cookies and cream. Decorate the top with cocoa and refrigerate overnight.
4. Vanilla tiramisu with boiled yolks
Raw yolks are boiled with boiling sugar syrup - it's safer.
You will need: 300 g savoyardi, 3 yolks, 115 g sugar, 35 g water, 2 tsp. vanilla sugar or vanilla, 300 ml coffee, 250 g mascarpone, 250 g cream 33-35%, 1-1.5 tsp. cocoa, 2 tablespoons liquor.
Preparation:
1. Pour water into a ladle, add sugar and boil until it dissolves. Increase the temperature and boil the syrup until it can be dripped into cold water and rolled into a ball of caramel.
2. Beat the yolks with vanilla sugar with a mixer until smooth and fluffy. Pour the syrup in a thin stream into the eggs, continuing to beat for another 7-10 minutes at maximum speed.
3. Mix the mascarpone with the yolk mass and refrigerate. Whip the cream until thick and add it to the cream too.
4. Dip cookies in coffee with liqueur and lay out evenly. Pour in cream, lay out the second layer of cookies and cream again. If you have a small tall shape, make more layers. Sprinkle with cocoa and refrigerate overnight.
5. Tiramisu without eggs
Many people do not like raw eggs in ready-made meals, so you can cook tiramisu at home without them!
You will need: 200 ml of cream from 33%, 1-2 tbsp.icing sugar, 400 g mascarpone, 200 ml coffee, 1 tsp. cognac, 200 g savoyardi, 1-2 tbsp. cocoa.
Preparation:
1. Whip the heavy cream with a mixer and, when it begins to thicken, add the sugar. Whisk until soft peaks for 3-5 minutes.
2. Put the cheese in portions into the cream and stir gently with a spatula until smooth.
3. Dip the Savoyardi in the coffee and place the first layer in a mold or on a plate. Top with cream, then - more cookies and more cream. Top with cocoa tiramisu and refrigerate.
