Delicate and fluffy biscuit is the perfect dessert for all occasions. It goes well with any creams, cocoa and fillings, and of course is good on its own. But everyone prepares it differently, so there is no universal secret. We are sharing with you 5 step-by-step recipes for biscuit on kefir!
1. Classic biscuit on kefir
You can even use expired kefir - it will only get better!
You will need: 2 eggs, 1 glass of sugar, 1 glass of kefir, 250 g of flour, 0.5 tsp. baking powder, 0.5 tsp. soda, a pinch of salt.
Preparation:
1. Beat eggs with sugar into a thick, fluffy mass of white.
2. Pour kefir in a thin stream and stir at minimum speed.
3. Add salt, baking soda and baking powder to the sifted flour, and gradually add it to the dough.
4. Line the baking dish with parchment, brush with butter, pour over the dough and bake for about 30-40 minutes at 170-180 degrees.
2. Vanilla biscuit on kefir
Vanilla extract makes the biscuit even more delicious and aromatic.
You will need: 2 eggs, 1 glass of sugar, 1 glass of kefir, 1.5 glasses of flour, 0.5 tsp. baking powder, 0.5 tsp. soda, 1 tsp. vanilla extract, a pinch of salt.
Preparation:
1. Beat eggs at room temperature with a mixer until smooth.
2. Add sugar to them in several approaches, continuing to stir. You should have a nice white airy mass.
3. Add vanilla extract and warm kefir, mix again and slowly add the sifted flour with the rest of the dry ingredients. Beat everything with a spatula - you can't use a mixer anymore.
4. Pour the smooth, lump-free dough into a mold and bake until dry with a toothpick - about 30 minutes at 180 degrees.
3. Sponge cake on kefir with cocoa
Delicate chocolate sponge cake can be eaten like this or used for cakes.
You will need: 250 ml of kefir, 200 g of sugar, 240-280 g of flour, 2 eggs, 100 ml of vegetable oil, 1/3 tsp. salt, 5 tbsp. cocoa, 1 tsp. soda or 1.5 tsp. baking powder.
Preparation:
1. Beat eggs with sugar until the mass turns white and grows in size. Pour butter into the egg mixture, and then warm kefir with soda.
2. Mix the sifted flour with the cocoa, add to the dough and quickly knead with a hand whisk.
3. Pour the sponge cake into a mold with a bottom covered with parchment and bake for 35-45 minutes at 180 degrees.
4. Sponge cake on kefir without eggs
Surprisingly, even without the eggs, the kefir biscuit turns out to be just as tender and airy.
You will need: 300 g flour, 150-200 g sugar, 350 ml kefir, 2 tsp. baking powder, 130 g of vegetable oil, 10 g of vanilla sugar.
Preparation:
1. Combine kefir, vegetable oil, sugar, vanilla sugar, baking powder and flour in a bowl.
2. Knead the dough until a nice homogeneous mass is slightly thicker than for the pancakes.
3. Line the pan with parchment, pour in the biscuit and bake for about half an hour at 180 degrees.
5. Wet sponge cake on kefir
Thanks to such proportions, the biscuit holds its shape perfectly, so it is suitable for complex cakes.
You will need: 220 ml of kefir, 80 ml of vegetable oil, 3 eggs, 300 g of flour, 220 g of sugar, 1 tsp. baking powder, 0.5 tsp. soda, a pinch of salt.
Preparation:
1. Beat eggs, sugar and salt with a mixer on high speed for about 10 minutes. Then pour in the butter with kefir and mix quickly.
2. Add the sifted flour and the rest of the dry ingredients, beat the dough on medium speed for about 1-2 minutes.
3. Let the dough sit for 5 minutes and pour it into a mold, cover with foil on top and send to the oven at 180 degrees. After half an hour, start checking the readiness with a skewer.
