- 100 ml of kefir
- 150 ml mayonnaise
- 4 tablespoons sour cream
- 2 cloves of garlic
- Herbs and spices
Preparation:
Mix kefir with sour cream and mayonnaise, add spices and chopped herbs to them. Chop the garlic on a grater or press and add to the sauce too. From spices, paprika, black pepper and suneli hops are perfect.
2. Tomato shawarma sauce
Combine this sauce with the previous one for a brighter and more varied taste.
You will need:
- 150 g tomatoes
- 50 g tomato paste
- 40 ml olive oil
- 100 g bell pepper
- 75 g onions
- 20 g cilantro
- A pinch of red pepper, salt and sugar

Peel the tomatoes, chop and fry them with onions. Add the pepper and the rest of the ingredients and cook together until the sauce begins to thicken. Chop the vegetables and add finely chopped greens at the very end.

You will need:
- 100 ml yogurt
- 10 ml lemon juice
- 1 teaspoon mustard
- A pinch of pepper and oregano
- 10 coriander kernels
- 5 olives
Preparation:
Whisk the lemon juice, mustard, oregano, coriander and pepper in a blender. Toss this mixture with yogurt and add the finely chopped olives at the end.
4. Hot shawarma sauce

You will need:
- 100 g tomato paste
- 100 g tomatoes
- 20 ml olive oil
- 20 g spicy adjika
- Half hot chili
- 20 g chopped cilantro
- 10 ml lemon juice
Preparation:
Peel the tomatoes and simmer them lightly in olive oil and spices. Add tomato paste, chopped hot peppers and spices to taste. Put all the ingredients in a blender, chop and add the herbs to the sauce at the end.
5. Garlic shawarma sauce

- 2 eggs
- 2 teaspoons of salt
- 2 tbsp olive oil
- 5 cloves of garlic
- 2 tbsp kefir
- 1 tsp lemon juice

- 200 ml freshly squeezed apple juice
- 3 tsp chili peppers

- 1 tbsp teriyaki

- 200 ml milk
- A pinch of salt
Preparation:
Melt the butter and fry the curry flour a little over low heat. Slowly pour in milk or cream and simmer, stirring occasionally, until thickened. If any lumps remain, whisk the sauce with a blender.
12. Mango shawarma sauce
In Arabic and Israeli cuisine, this sweet-savory shawarma sauce is called amba.

- 1 large mango
- 2 tbsp olive oil
- 0.5 tsp each. coriander, cumin, curry, turmeric and chili flakes
- 2 cloves of garlic
- 60 g sugar
- 4 tsp lemon juice
- 100-200 ml water and salt
Preparation:
Heat the garlic in oil and add spices to it to give it a better flavor. Pour water, lemon juice and sugar into a saucepan with a thick bottom, add chopped mango and boil until soft.
