The long-awaited warm days are approaching, and I want some simple and understandable food. We share 20 recipes for light salads - with vegetables, fruits, chicken and tuna. In our selection, you will definitely find several options to your taste!
1. Salad with crab sticks
For dressing, we recommend sour cream, yogurt or diet homemade mayonnaise.
You will need: 300 g cabbage, 120 g crab sticks, 2 tomatoes, 1 cucumber, green onions.
Preparation: Chop the cabbage thinly, chop the crab sticks and chop the green onions. Cut the cucumber into strips and cut the tomatoes into medium-sized wedges and stir the salad.
2. Salad with chicken and Korean carrots
If you need a more satisfying option, add a handful of crackers or nuts.
You will need: 400 g smoked or boiled chicken, 300 g Korean carrots, 250 g canned corn, 3 tbsp. sour cream.
Preparation: Cut the chicken into thin strips along the grain. Stir the ingredients and season the salad with sour cream or yogurt to taste.
3. Light green bean salad
Add a couple of green olives if desired.
You will need: 300 g green beans, 3 eggs, 2 cloves of garlic, green onions, 100 g cheese, 1 tbsp. olive oil.
Preparation: Boil the eggs and beans until tender, chop the eggs into cubes, and the grated cheese on a coarse grater. Add chopped garlic and green onions and drizzle olive oil over the salad.
4. Salad with tuna and pickled cucumbers
When you want a richer and brighter taste.
You will need: 240 g tuna, a quarter of a red onion, 3 pickles, half a lemon, 3 tbsp. yogurt, 1 tbsp. granular mustard, spices and herbs.
Preparation: Cut the onion and pickles into very small cubes and mash the tuna. Mix yogurt with lemon juice and mustard, season salad, season to taste and sprinkle with herbs.
5. Salad with cabbage and green peas
Frozen peas scalded with boiling water are perfect.
You will need: 300 g cabbage, 2 cucumbers, 2 tomatoes, 200 g peas, greens and green onions, 2 tbsp. olive oil, 1 tablespoon lemon juice.
Preparation: Chop the cabbage thinly and knead it with your hands. Cut the cucumbers and tomatoes into strips, chop the herbs and add the peas to the salad. Sprinkle it with olive oil and lemon juice.
6. Light salad with chicken and celery
Boiled chicken fillet will fit better here.
You will need: 600 g chicken, 3 celery stalks, 200 g grapes, green onions, 1 tsp. granular mustard, sour cream, spices.
Preparation: Cut the boiled chicken and celery into small cubes and cut the large grapes in half. Season the salad with sour cream with mustard and spices.
7. Radish and pepper salad
One of the most useful recipes that will give you a powerful vitamin boost.
You will need: 2 black radishes, 2 carrots, 2 cucumbers, 1 pepper, 0.5 onions, spices, 4 tbsp. sour cream, 1 tsp. mustard.
Preparation: Grate radish and carrots on a coarse grater, mix well and mash with spices with your hands. Thinly chop the rest of the vegetables, stir the salad and season.
8. Light salad of beets and apples
Much easier!
You will need: 1 beet, 1 apple, 1 tbsp. raisins, 1 tsp. lemon juice, mint, walnuts, sour cream.
Preparation: Bake the beets until tender, cut into cubes and drizzle with lemon juice. Cut the apples in the same way, add the raisins and nuts, and stir the salad. Fill it with sour cream and garnish with mint.
9. Chicken and kiwi salad
A very unusual recipe when you want originality.
You will need: 200 g of chicken, 150 g of carrots, 3 eggs, 3 kiwi, 2 apples, sour cream.
Preparation: Boil chicken and eggs. Cut the chicken and kiwi into small cubes, and rub the rest of the ingredients on a coarse grater. Layer chicken, kiwi, carrot, apple and eggs, brushing each with spiced sour cream.
10. Egg and cauliflower salad
An original salad that is suitable for dinner and for a holiday.
You will need: 2 eggs, 400 g of cauliflower, 1 carrot, 2 cucumbers, 1 stalk of celery, 8 radishes, 1 bunch of green onions, olives, sour cream.
Preparation: Boil cauliflower inflorescences until soft, and separately boil and cut the eggs. Chop the rest of the vegetables at random, add chopped green onions and olives, and sprinkle the salad with sour cream.
11. Light salad with cottage cheese
To be honest, a few tablespoons of cottage cheese will decorate almost any vegetable salad.
You will need: 100 g of cottage cheese, 6 radishes, 3 cucumbers, 1 carrot, 0.5 bunch of lettuce, 1 tbsp. yogurt.
Preparation: Chop the lettuce leaves, grate the carrots, and cut the radishes and cucumbers into slices. Add grainy cottage cheese and some yogurt to the salad for flavor.
12. Salad with tuna and avocado
Garnish with mint sprigs or basil leaves.
You will need: 1 avocado, 1 cucumber, 1 stalk of celery, green onions, half a bunch of cilantro, 1 tablespoon each olive oil and lemon juice, 100 g of tuna, spices.
Preparation: Chop celery, avocado and cucumber into small cubes and add chopped tuna. Chop green onions and cilantro there, and pour the salad with butter, lemon juice and spices.
13. Salad with spinach and tomatoes
Fresh spinach is a must for this recipe.
You will need: 1 bunch of spinach, 150 g of cottage cheese, 2 tomatoes, basil, a handful of nuts, spices.
Preparation: Rinse the spinach well and chop it a little. In the same way, chop the basil, chop the tomatoes coarsely and add the cottage cheese to the salad. Sprinkle everything with spices and chopped nuts.
14. Light salad with shrimps
We offer a more refined recipe.
You will need: 150 g lettuce leaves, 100 g arugula, 500 g shrimp, 4 tablespoons each. olive oil and lemon juice, 150 g cherry, 2 tablespoons each. soy sauce and white wine, spices.
Preparation: Boil the shrimp for 3 minutes, peel and fry until golden brown in olive oil. Pour lemon juice and soy sauce over them and leave. Pick the greens at random, cut the cherry in half and add the shrimp to it. Mix remaining oil, lemon juice, soy sauce and wine for dressing.
15. Chicken and Peking Cabbage Salad
Shredded hard cheese will work too.
You will need: 200 g of chicken, 200 g of Chinese cabbage, 2 tomatoes, 3 tbsp. sour cream, 100 g of soft cheese or cottage cheese.
Preparation: Boil the chicken and cut it into cubes along with the tomatoes. Chop Chinese cabbage and chop the cheese at random, stir the salad, and then season it with sour cream.
16. Chicken and Rice Salad
This salad is a great substitute for a main course for lunch or dinner!
You will need: 200 g chicken, 70 g rice, 2 peppers, 100 g peas, a handful of olives, green onions, herbs, spices, 1 tbsp. wine vinegar, 2 tbsp. olive oil, 1 tsp. dijon mustard.
Preparation: Boil the chicken and rice, and chop all the ingredients at random. Take canned peas or pour over frozen peas with boiling water. Add chopped greens and green onions there, and prepare a dressing with oil, vinegar and mustard.
17. Salad with corn and pineapple
You can serve it like that or sprinkle it with your favorite dressing.
You will need: 1 can of pineapple, 1 can of corn, 1 pepper, 400 g of chicken, green onions.
Preparation: Boil the chicken until tender and dice with pineapple and pepper. Add canned corn and chopped green onions to the salad and stir.
18. Tuna and apple salad
Sprinkle it with chopped nuts, sesame seeds, or flaxseeds on top.
You will need: 1 onion, 1 apple, 1 avocado, 240 g of tuna, 2 tsp. sour cream, 1 tsp. lemon juice, mustard and spices, salad mix.
Preparation: Dice the apples and drizzle with lemon juice. Similarly, chop the avocado, finely chop the onion and mash the tuna with a fork. Add salad mix and herbs, mix everything and season with sour cream and mustard.
19. Light fruit salad
The yoghurt goes well with any piece of fruit, so experiment with pleasure.
You will need: 200 ml yogurt, 2 tangerines, 2 apples, 2 kiwi, 1 banana.
Preparation: Cut the kiwi, banana and apples into cubes, and disassemble the tangerines into slices and peel them off. Stir the fruit, top with yogurt and serve immediately.
20. Salad with rice, beets and feta
Instead of rice, you can take bulgur.
You will need: 90 g of rice, 1 onion, 2 beets, 40 g of feta, garlic and herbs, spices, 1 tsp each. olive oil, mustard and lemon peel.
Preparation: Boil the rice until tender, and bake the beets in the oven, and then cut into small cubes. Cut into feta salad, add chopped herbs and fields with lemon zest dressing.
