During the period of harvesting for the winter, it is important not to miss the season of healthy berries. One of the first to roll up honeysuckle jam, since fruiting begins already at the beginning of summer. 1. Honeysuckle jam "Pyatiminutka"
Be sure to sterilize jars and lids.
You will need: 1 kg of honeysuckle, 1 kg of sugar.
Preparation: Rinse the berries, sort out, cover with sugar and leave for 6 hours. Boil over low heat for 5 minutes, pour the jam into jars and roll up.
2. Honeysuckle jam with citric acid
Citric acid acts as a preservative here.
You will need: 2 kg of honeysuckle, 2 kg of sugar, 0.5 tsp. citric acid.
Preparation: Cover the washed honeysuckle with sugar and set it aside for 6-8 hours. Bring to a boil over low heat, add citric acid and cook for 7-10 minutes.
3. Raw honeysuckle jam
Fill the jar with sugar 1 centimeter from above.
You will need: 2 kg of honeysuckle, 2.5 kg of sugar, 3 g of citric acid.
Preparation: Rinse the honeysuckle and dry thoroughly. Mix berries with sugar and leave for 8 hours. Add citric acid, grind the mass with an immersion blender and arrange in jars.
4. Jam with honeysuckle, vanilla and cinnamon
Be sure to skim off the foam during the cooking process.
You will need: 1 kg of honeysuckle berries, 1 cinnamon stick, vanillin on the tip of a knife, 1 kg of sugar, 1 tbsp. lemon juice.
Preparation: Sprinkle the prepared honeysuckle with sugar and put it in a cold place for 5 hours. Add cinnamon, vanillin, lemon juice and simmer for 15 minutes. Pour hot jam into jars and roll up.
5. Honeysuckle and orange jam
This jam can be easily served with cottage cheese, pancakes or casserole.
You will need: 1 kg of honeysuckle, 2 oranges, a glass of water, 1.5 kg of sugar.
Preparation: Rinse and sort the berries, peel the oranges. Grind honeysuckle and oranges through a meat grinder. Mix water with sugar, boil for 5 minutes, add the chopped mass and boil for 25 minutes after boiling. Pour hot jam into jars and roll up.
6. Jam with honeysuckle and lemon
If you submerge the berries in water, the debris will float to the surface by itself.
You will need: 1 kg of honeysuckle berries, 1 lemon, 1.5 kg of sugar.
Preparation: Rinse the honeysuckle, add sugar and remove overnight. Pour the lemon over with boiling water, peel it and mince it with the honeysuckle. Boil the jam for 10 minutes, pour it into jars and roll up.
7. Honeysuckle jam with raspberries
Very healthy and tasty winter jam for the whole family!
You will need: 2 kg of honeysuckle, 500 g of raspberries, 2 kg of sugar, 0.5 tsp. citric acid.
Preparation: Sort out the berries, rinse and cover with sugar for 8 hours. Grind with an immersion blender, add citric acid and boil for 10 minutes. Pour into a prepared container and close with lids.
8. Honeysuckle and strawberry jam
You can change the ratio of honeysuckle and strawberry to your taste.
You will need: 1 kg of honeysuckle, 400 g of strawberries, 1 kg of sugar, 1 tbsp. lemon juice.
Preparation: Cover the washed berries with sugar and leave for 6-8 hours. Add lemon juice, boil the jam for 10 minutes and roll up.
9. Sugar-free honeysuckle jam
At the bottom of the pan, be sure to bed a towel so that the jars of jam do not bump against each other during the cooking process.
You will need: 3 kg of honeysuckle berries.
Preparation: Sort out the berries, rinse and put them in clean jars. Place the jars in a large saucepan and heat over low heat. As the berries settle, refill the cans to the top. Sterilize for half an hour and roll up.
10. Jam with honeysuckle and black currant
It is convenient to remove currant stalks with scissors.
You will need: 2 kg of honeysuckle, 800 g of black currant, 2 kg of sugar, a pinch of citric acid.
Preparation: Sort out the berries, rinse, add sugar and leave for 6 hours.Add citric acid and simmer for 10 minutes. Pour hot jam into a prepared container and roll up.
11. Honeysuckle jam with pectin
It is important to mix the pectin and sugar well, otherwise lumps will form in the jam.
You will need: 1.5 kg of honeysuckle, 1 kg of sugar, 15 g of pectin.
Preparation: Sort the berries, rinse and mince. Add 800 g of sugar, stir and cook for 10 minutes. Mix the pectin with sugar and add to the jam. Cook for another 5 minutes, pour into jars and close the lids
12. Honeysuckle jam with gelatin
The jam keeps its shape perfectly, but melts quickly at high temperatures.
You will need: 1 kg of honeysuckle, 20 g of gelatin, 1 kg of sugar, a glass of water.
Preparation: Cover the washed honeysuckle with sugar and leave it overnight. In the morning, pass it through a meat grinder, add gelatin dissolved in water and boil for 15 minutes. Roll up the jam hot.
13. Honeysuckle jam with agar-agar
Choose agar agar with a gel strength of at least 900.
You will need: 2 kg of honeysuckle, 2.5 kg of sugar, 8 g of agar-agar, half a glass of boiling water.
Preparation: Rinse the honeysuckle, cover with sugar and leave for 5-6 hours. Bring to a boil and boil for 5 minutes. Stir agar-agar with water and pour into a saucepan in a thin stream, stirring constantly. Cook for 10 minutes, pour hot jam into jars.
14. Whole honeysuckle jam
Most of the time, honeysuckle berries are infused in syrup.
You will need: 1 kg of honeysuckle, 200 ml of water, 1 kg of sugar.
Preparation: Sort out the berries and rinse. Boil water with sugar for 5 minutes, add honeysuckle and turn it off. After an hour, drain the syrup, boil again for 5 minutes and add the berries. The third time, cook everything together for 7 minutes, pour into sterilized jars and roll up.
15. Thick honeysuckle jam
To test the consistency, pour a spoonful of the jam onto a cold plate.
You will need: 1 kg of honeysuckle, 1 kg of sugar, a pinch of citric acid.
Preparation: Sprinkle the washed honeysuckle with sugar and leave for 5 hours to get juice. Boil the jam over low heat for 15 minutes, turn it off and cool. Add citric acid and boil again for 15 minutes. Pour the jam into sterilized jars and roll up.
16. Jam with honeysuckle and rhubarb
Rhubarb is very sour, so the given amount of sugar may not be enough.
You will need: 1 kg of honeysuckle, 1 kg of rhubarb, 2 kg of sugar, a pinch of citric acid.
Preparation: Sort out the honeysuckle berries and rinse, peel the rhubarb from the films. Put everything in a saucepan, cover with sugar and leave for 4 hours. Bring the mixture to a boil over low heat, add citric acid and sweat for 20 minutes. Put the jam in a prepared container and close the lids.
17. Jam from honeysuckle juice and berries
You can buy honeysuckle juice or squeeze it yourself.
You will need: 1 liter of honeysuckle juice, 500 g of honeysuckle berries, 0.5 tsp. citric acid, 2 cups sugar.
Preparation: Rinse the berries, mix with sugar and leave in the refrigerator for 5 hours. Add citric acid, honeysuckle juice and boil for 10 minutes. Pour the jam into jars, roll up and wrap it up with a warm towel for a day.
18. Jam from honeysuckle for the winter
Put the berries with sugar in a cold place, otherwise they may ferment.
You will need: 2 kg of honeysuckle berries, 2 kg of sugar, 20 g of gelling sugar.
Preparation: Sort out the honeysuckle, rinse and dry. Mix sugar with gelling sugar and berries. Leave the bowl for 4-5 hours for the juice to appear. Boil over low heat for 10 minutes, pour into jars and roll up.
19. Frozen Honeysuckle Jam
You don't need to defrost the honeysuckle to make the jam!
You will need: 1 kg of frozen honeysuckle, 1.5 kg of sugar, a glass of water.
Preparation: Pour boiling water over the berries. Boil water with sugar for 5 minutes, remove from heat, add honeysuckle and leave for an hour. Boil the jam over low heat for 10 minutes, pour it into a prepared container and roll up.
20. Honeysuckle jam in a slow cooker
If your multicooker has the Jam program, use it!
You will need: 1 kg of honeysuckle, 900 g of sugar, 1 tbsp. lemon juice.
Preparation: Mix the prepared honeysuckle with sugar in a multicooker bowl. Boil for 5 minutes and leave for 5 hours. Add lemon juice and cook on the Stew or Jam program for 10 minutes. Pour into jars and roll up.
