1. Sorrel and nettle soup with egg
Lean soup can be made more satisfying by replacing the water with broth.
You will need: 2.5 liters of water, 250 g of sorrel, 200 g of nettle, 5 boiled eggs, 250 g of potatoes, 3 stalks of green onions, 1 carrot, 1.5 tsp. salt, 3 black peppercorns.
Preparation: Cut the vegetables into cubes, scald the nettle with boiling water, chop the greens. Boil potatoes and carrots in salted water for 15 minutes. Add black pepper, salt, nettle, sorrel and green onions. After a minute, turn off the heat and cover. When serving, add half an egg to the bowl of soup.
2. Chicken noodle soup with egg
A gorgeous soup that you want to cook over and over again!
You will need: 3 l of water, 300 g of chicken fillet, 250 g of potatoes, 150 g of noodles, 4 boiled eggs, 1 carrot, a bunch of greens, 1 onion, 50 ml of vegetable oil, 2 tsp. salt, ground pepper, 2 bay leaves, 4 black peppercorns.
Preparation: Cook chicken broth with spices. Add the diced potatoes and boil for 10 minutes. Fry chopped onions and carrots until golden brown and pour into a saucepan. After 5 minutes, add the noodles and salt. Cook the soup for another 10 minutes, then sprinkle with herbs and turn off. Garnish the soup with half an egg.
3. Classic sorrel soup with egg
Serve with chilled sour cream!
You will need: 1.5 liters of water, 3 potatoes, 250 g of sorrel, 3 boiled eggs, 1 chicken breast, onion, carrot, 1 bay leaf, 5 allspice peas, 1 tsp. salt, pepper, 2 tbsp. vegetable oil.
Preparation: Boil the chicken in salted water with spices for 30 minutes. Fry chopped onions and carrots. Add the diced potatoes to the broth and cook for 10 minutes. Then pour in the frying, salt and pepper. Finally, add the chopped sorrel, cover and let the dish sit for 15 minutes. Garnish the soup with a cut egg when serving.
4. Chicken soup with egg chatter
You can regulate the density by the number of eggs.
You need: 2 liters of water, 300 g of chicken, 3 potatoes, 1 carrot, medium onion, 3 chicken eggs, 3 sprigs of dill, 2 liters of flour, 2 tbsp. vegetable oil, salt and pepper to taste.
Preparation: Boil the meat in salted water for 30 minutes. Add chopped potatoes. Fry chopped onions and carrots, add flour to them, mix and pour 200 ml of broth from a saucepan. After 10 minutes, send the frying to the soup.
In a separate bowl, stir eggs with salt and pepper until smooth. Pour the egg mixture in a thin stream into the boiling soup, stirring vigorously. Boil for another 5 minutes and sprinkle with herbs.
5. Soup with seaweed and egg
We recommend using Korean seaweed in this recipe.
You will need: 2 liters of water, 250 g of potatoes, 300 g of meat, 250 g of seaweed, 4 boiled eggs, onions, 1 carrot, 70 ml of vegetable oil, salt, pepper.
Preparation: Cook broth on meat. Add potato cubes when done. Chop the onions and carrots and fry in a pan. After 10 minutes, add the roast and seaweed to the saucepan. Boil for 5 minutes.
Chop half of the eggs and add to the soup before turning off, and use the rest to garnish portions.
6. Potato soup with egg

You will need: 2 liters of water, 3 eggs, 300 g of potatoes, 1 onion, medium carrots, 50 g of butter, dried marjoram, salt, 1 bay leaf, 3 black peppercorns, a sprig of parsley.
Preparation: Cut the potatoes and boil them in salted water with spices for 10 minutes. Add diced carrots. Chop the onion and fry in butter. Pour the stir-fry into the soup and boil for 5 minutes. In a separate bowl, stir eggs with salt and pepper. Pour the mixture into the soup, stirring constantly.Turn off the heat after 2 minutes.
7. Italian soup "Straciatella"
This soup is very popular in central Italy.
You will need: 300 g of chicken, 2 liters of water, 50 g of blue cheese, 3 eggs, 150 g of semolina, herbs, lemon wedge, salt, ground black pepper.
Preparation: Boil the meat for 30 minutes in lightly salted water. While stirring, pour semolina into the broth. Stir the eggs until smooth with the cheese, salt and pepper. Preparation: Peel the tomato and cut into cubes. Stir eggs with salt, sauce, pepper and pour into a skillet. After a minute, add garlic to them and stir. Add tomatoes, onions and carcasses, stirring occasionally, until liquid appears. Bring the soup to the desired thickness with boiling broth.
10. Creamy mushroom and egg soup
You can use pieces of fried mushrooms for decoration.
You will need: 1 l of meat broth, a glass of milk, 3 eggs, 400 g of mushrooms, 2 tbsp. flour, 150 ml cream, 1 leek, 50 g butter, pepper and salt to taste, herbs.
Preparation: Fry chopped onions in butter. Add chopped mushrooms and carcasses for 15 minutes. In a separate frying pan, fry the flour, pour in the milk and boil for 5 minutes. Boil the broth in a saucepan, add the contents of both pans and cook for 7 minutes under the lid.
Mix eggs with spices, cream and pour in a thin stream into a saucepan. Grind the soup with an immersion blender and reheat.
11. Cheese soup with egg
Use high-fat cheese.
You will need: 2 liters of water, 2 processed cheese, 3 chicken eggs, 300 g of potatoes, onions, 1 carrot, half a bunch of your favorite greens, 150 g of butter, 15 g of salt, hot pepper.
Preparation: Cut the potatoes into cubes and boil for 15 minutes. Fry chopped onions and carrots until half cooked. Pour the frying into the soup and boil for 3 minutes.

12. Soup with smoked sausages and egg

18. Creamy asparagus soup with poached egg
The soup can be served hot or cold with lemon added.
You will need: 2 liters of vegetable broth, 4 eggs, 2 potatoes, 400 g of asparagus, 60 ml of olive oil, 1 leek, 2 cloves of garlic, 15 g of salt, ground pepper mixture, a slice of lemon.
Preparation: Fry chopped asparagus in olive oil, add chopped onion and garlic. Boil potatoes in broth, add frying and boil for 7 minutes.

19. Greek egg soup
Ideally use orzo pasta.

20. Corn soup with egg
A great option for a hearty first course.
You will need: 2 liters of water, 3 chicken eggs, 1 can of canned corn, 3 tbsp. cornstarch, 2 processed cheese, 3 cloves of garlic, 15 g of salt, ground black pepper, 3 allspice peas.
Preparation: Stir the starch with 100 ml of cold water and pour in a thin stream into the boiling soup. Shake eggs with salt, spices and also send to a saucepan. After 3 minutes, add the washed corn and processed cheese. Sprinkle with chopped herbs and remove from heat.
