There are about a dozen popular legends about the origin of the charlotte - legends of the royal court, romantic tragedies about unrequited love and stories about thrifty townspeople who made pastries from wet bread and rusks. There are a lot of modern variations of the popular dessert, but we have selected 4 of the best charlotte recipes with apples in the oven!
1. Classic charlotte
Light dough, as many apples as possible, minimum complexity - everything that we love so much!
You will need: 5 eggs, 1 glass of sugar, 1 glass of flour, 7 apples, butter, 0.5 tsp. soda.
Preparation:
1. Turn on the oven 180 degrees - let it warm up;
2. Separate the whites and beat them with sugar until dense peaks;
3. Add one yolk to the whites, continue beating, and gradually add the rest;
4. Without stopping whisking, add flour and slaked soda to make the dough resemble fat sour cream. You can replace baking soda with a teaspoon of baking powder;
5. Grease the pan with butter, pour half of the dough, put the apple slices and cover with the rest of the dough. It is better to take sour apples for a contrast of tastes;
6. On top you can put some more apples or sprinkle with cinnamon for flavor;
7. Bake for about 25 minutes, until the top is evenly golden;
8. Serve with powdered sugar, caramel, jam, sour cream, ice cream - to your taste.
2. Charlotte on sour cream
The dough turns out to be slightly denser, but surprisingly soft and tender.
You will need: 3 eggs, 6 tablespoons fat sour cream, 2 cups of sugar and flour, 150 g of butter, 800 g of apples, 0.5 tsp. soda, vanillin.
Preparation:
1. Grind eggs with sugar and beat until the mixture turns white. If you don't like too sweet dough, reduce the amount of sugar by a third;
2. In sour cream, extinguish the soda and add the mixture to the eggs;
3. Add a little vanillin and well-sifted flour to the dough so that there are no lumps;
4. Lastly, stir in the softened butter. Brand and fat content are not important for charlotte;
5. Peel the apples, cut into large wedges and place 3/4 on the bottom of the dish, oiled or covered with parchment;
6. Fill a layer of apples with dough, and drown the remaining slices inside;
7. Bake charlotte for half an hour at 180 degrees, but if after that it remains raw inside - reduce the temperature to 150 and hold for another 10 minutes;
8. Turn the pie over before serving so that the apples lay nicely on top.
3. Charlotte on oatmeal and kefir
This charlotte recipe has fewer calories and significantly more benefits!
You will need: 3 eggs, 1 glass of kefir, 6 apples, 0.5 cups of flour and oatmeal, 3 tsp. honey, 1 tsp. baking powder.
Preparation:
1. In a deep bowl, mix the flakes, flour, 1 egg, honey and kefir so that the dough is smooth. It is liquid in consistency and resembles a pancake;
2. Separately, whisk the remaining eggs with a whisk and whisk into the dough. You won't need yolks;
3. Wait half an hour for the flakes to swell and the mass thickens;
4. During this time, cut the apples into slices and preheat the oven to 180 degrees;
5. Add baking powder to the dough and something to your liking: cinnamon, vanillin, cocoa;
6. Put the apples in a greased dish, cover with dough and bake for half an hour.
4. Charlotte from black bread
The old charlotte was made from leftover bread, and we tried to restore the recipe!
You will need: 2 pieces of black bread, 2 glasses of sour cream, 1 glass of sugar, 12 apples.
Preparation:
1. Take stale bread and grate it on a coarse grater - you get about 2 cups of bread crumbs;
2. Peel the apples and cut into slices, lightly sprinkle them with sugar and let sit for 10 minutes;
3. Turn on the oven at 200 degrees - let it warm up;
4. Put a layer of bread crumbs in a mold, on them - apple slices, and pour half of the remaining sugar on top;
5. Repeat everything one more time: crumbs, apples, sugar;
6.Pour sour cream on top of the charlotte and lay out the last layer of bread crumbs;
7. Bake for about 40 minutes, until the top layer is visibly browned.
