Potatoes are nourishing, quick and healthy. But not only a side dish can be prepared from it! To prove this in practice, we have prepared 20 potato salad recipes for all occasions. With meat, fish, vegetables - whatever!
1. Potato salad with brisket
A hearty and everyday Swedish recipe.
You will need: 300 g potatoes, 1 onion, 1 apple, 80 g brisket, 1 cucumber, 1 tbsp. lemon juice, 1 tsp. wine vinegar, a pinch of sugar and salt, herbs, spices, mayonnaise.
Preparation: Cut the onion into half rings and marinate it in vinegar, sugar and salt. Boil the potatoes and cut them into slices. Fry the strips of brisket in a dry frying pan. Chop the cucumbers with apples and drizzle with lemon juice. Stir the salad, season, add herbs and season with mayonnaise.
2. Potato salad with oyster mushrooms
Everything is clear with potatoes and champignons, so let's take a more interesting option!
You will need: 2 potatoes, 250 g oyster mushrooms, 1 pepper, half zucchini, 1 clove of garlic, 1 bunch of thyme.
Preparation: Cut the mushrooms into large cubes and fry. In the same oil, fry the cubes of pre-cooked potatoes. Add the crushed garlic and chopped thyme, stir the potatoes with the mushrooms and the rest of the vegetables.
3. Potato salad with avocado
An original, but at the same time very tasty salad for real gourmets.
You will need: 1 potato, 1 avocado, half a cucumber, 1 bunch of herbs, spices, olive oil.
Preparation: Boil the potatoes and cut all the ingredients into equal cubes. Add chopped herbs, spices and olive oil.
4. Potato salad with beef and cheese
Arrange the salad in layers or in a serving ring.
You will need: 500 g of beef, 4 potatoes, 4 tomatoes, 3 pickled cucumbers, 150 g of cheese, mayonnaise.
Preparation: Boil potatoes and beef ahead of time and let them cool. Cut all the ingredients into large cubes, add the grated cheese and season with mayonnaise.
5. Potato salad with meat
Gyros is best, but you can simply cut it into thin slices and fry it.
You will need: 500 g potatoes, 300 g meat, 2 tomatoes, half a cucumber, 1 onion, 250 g Greek yogurt, 1 tbsp. olive oil, 2 tablespoons milk, 0.5 tsp. marjoram and thyme, spices, salt, pepper.
Preparation: Make a yoghurt, milk and olive oil dressing with more herbs and spices. Boil the potatoes, cut them into cubes along with the vegetables, add the prepared meat and season the salad.
6. Potato salad with mushrooms
The classic combination of potatoes with mushrooms, with which it is impossible to miscalculate.
You will need: 2 potatoes, 400 g of champignons, 1 onion, 100 g of cheese, 1 chicken fillet, 2 eggs, mayonnaise.
Preparation: Boil eggs, chicken and potatoes, chop the mushrooms and fry with onions. Layer grated potatoes, mayonnaise, mushrooms, mayonnaise, shredded chicken, mayonnaise, grated eggs, mayonnaise and grated cheese.
7. Potato salad with pickled cucumbers
A very easy and quick salad of products that are always at hand.
You will need: 2 potatoes, 2 eggs, 1 pickled cucumber, 1 bunch of greens, 2 tbsp. mayonnaise, 1 tsp. mustard.
Preparation: Boil the potatoes and eggs, cut all the ingredients into equal pieces and add the herbs. Season the salad with mayonnaise and mustard to taste.
8. Potato salad with crab sticks
Reimagining the familiar crab stick salad.
You will need: 250 g crab sticks, 2 potatoes, 2 pickled cucumbers, green onions, 3 eggs, 0.5 cans of corn, 1 carrot, mayonnaise.
Preparation: Boil the potatoes, eggs and carrots and cut all the ingredients into small cubes. Add corn and stir salad with mayonnaise before serving.
9. Potato salad with feta cheese
Instead of feta cheese, suluguni or other brine cheese is suitable.
You will need: 200 g potatoes, 50 g feta cheese, 50 g green beans, 50 g olives, olive oil, lemon juice, oregano.
Preparation: Boil potatoes, cut into pieces and fry on a grill or dry skillet. Cook the beans until cooked, cut the olives into slices and cut the cheese into the salad. Sprinkle everything with oil, lemon juice and a sprinkle of oregano.
10. Potato salad with sauerkraut
Great lean salad recipe without meat, dairy products and eggs.
You will need: 400 g potatoes, 250 g sauerkraut, 300 g carrots, 250 g peas, 3 tbsp. vegetable oil.
Preparation: Boil potatoes and carrots, cut into cubes and add peas. Squeeze the cabbage lightly and stir in the salad. Fill with a little oil if desired.
11. Potato salad with canned fish and nuts
This salad resembles mimosa, but it turns out to be more original.
You will need: 160 g potatoes, 1 can of canned fish, 2 eggs, 80 g apples, 90 g cheese, 30 g walnuts, mayonnaise.
Preparation: Boil potatoes and eggs and cut them into small cubes. Mash the fish with a fork, chop the apples, grate the cheese and chop the nuts. Layer potatoes, fish, mayonnaise, apples, eggs, mayonnaise, cheese and nuts.
12. Potato salad with radish
The salad will be tastier with small young potatoes and fresh peas.
You will need: 500 g potatoes, 200 g green beans, 150 g peas, 10 radishes, green onions and herbs, 0.5 tbsp. apple cider vinegar, 2 tablespoons olive oil, 1 tsp. granular mustard.
Preparation: Boil potatoes, beans and peas until tender. Cut the potatoes into large slices and the radishes into thin slices. Add chopped greens and fields salad with a dressing of oil, vinegar and mustard.
13. Potato salad with mackerel and apple
Take cold or hot smoked mackerel.
You will need: 3 potatoes, 200 g mackerel, 1 cucumber, 1 apple, green onion, 1 tbsp. lemon juice, olive oil, spices.
Preparation: Boil potatoes and cut into cubes. Disassemble the mackerel by hand, add an apple and a cucumber to it. Sprinkle the salad with lemon juice, add spices and chopped green onions, and a little oil.
14. Potato salad with smoked meats
A very hearty and aromatic salad for a family dinner.
You will need: 1 kg of potatoes, 300 g of bacon, 400 g of smoked meats, 200 g of pickled cucumbers, 2 red onions, 1 bunch of green onions, 100 ml of olive oil, 2 tbsp. Dijon mustard, juice of half a lemon, spices.
Preparation: Boil potatoes and cut into slices. Fry the bacon with smoked meats without oil, and fry the onions in the same pan. Stir these ingredients in a dressing of oil, mustard and lemon juice and let sit for 15 minutes. Then add the cucumber straws and chopped green onions.
15. Potato salad with turmeric and chili
Turmeric gives the dressing such a rich yellow color.
You will need: 500 g potatoes, 40 g sour cream, 80 g mayonnaise, 180 g pickled cucumbers, 2 eggs, 1 tsp. turmeric, 1 tsp. pepper, green onions, chili flakes.
Preparation: Boil potatoes and eggs, and cut them together with cucumbers. Mix sour cream with mayonnaise and spices for dressing, and sprinkle salad with green onions before serving.
16. Potato salad with pepper and feta
This Italian potato salad is not only delicious but also very beautiful.
You will need: 800 g potatoes, 200 g tomatoes, 1 bunch of basil, 2 colored peppers, 2 cloves of garlic, olive oil, 200 g olives and olives, 150 g feta, 60 ml wine vinegar.
Preparation: Boil potatoes and chop coarsely. Cut the tomatoes into large pieces, pour in 6 tbsp. oil and leave for 15 minutes. Chop the herbs and garlic, chop the peppers and add the olives and olives. Stir in salad, drizzle with vinegar and add feta pieces.
17. Potato salad with herring
Boil or bake potatoes in advance, and then it will take only a few minutes to prepare the salad.
You will need: 5 potatoes, 1 herring, lettuce, 1 bunch of dill, green onions, 1 tsp.granular mustard, vegetable oil, spices.
Preparation: Coarsely chop the finished potatoes and herring, add lettuce and chopped herbs to them. Season the salad and season with the mustard oil.
18. Potato salad with red fish and capers
The recipe for this potato salad is a gourmet godsend!
You will need: 3 potatoes, 2 pickles, 150 g lettuce, 200 g salted red fish, 3 tbsp. mayonnaise, 1 tbsp. capers, 1 tsp. mustard, spices.
Preparation: Chop the capers and mix them with mayonnaise, mustard and spices. Boil potatoes and cut into cubes with cucumbers. Pick the leaves at random, and cut the fish into thin strips. Season the salad and stir.
19. Potato salad with sausage
One of the classic German recipes for their vaunted potato salad.
You will need: 5 potatoes, 5 pickled cucumbers, 150 g corn, 200 g sausage, 1 onion, 3 eggs, 2 apples, 3 tbsp. mayonnaise, herbs, spices.
Preparation: Boil potatoes and eggs, dice all the ingredients and pour boiling water over the onion. Stir in the salad, add spices and chopped herbs, and season with mayonnaise.
20. Potato salad with olives
Choose olives or olives according to your taste, but they must be pitted.
You will need: 1 kg potatoes, 1 can of olives, 1 bunch of parsley, lettuce, 2 tbsp. wine vinegar, 1 tbsp. mustard, 1 clove of garlic.
Preparation: Mix 2 tbsp. Olive liquids with vinegar, mustard and crushed garlic, gradually adding oil until the consistency of thick sour cream. Boil the potatoes, cut into large pieces and roughly chop the olives and parsley into it. Spread lettuce over leaves and dressing fields.
