1. Risotto with mushrooms
The main thing is to resist and not eat it until the end of cooking!
You will need: 300 g of rice for risotto, 100 g of butter, 1 onion, 200 ml of white wine, 1 liter of chicken broth, 300 g of mushrooms, a pinch of salt, a pinch of saffron.
Preparation: Finely chop the onion and fry in butter, and then add the chopped champignons to it. When all excess moisture has evaporated, add rice and fry, stirring occasionally, for 2 minutes. Pour in wine and broth and continue cooking without a lid until they evaporate. Add salt and saffron halfway through the process.
2. Lentils with champignons
A very satisfying, simple and budget recipe for mushroom and lentil lovers.
You will need: 1 glass of lentils, 300 g of champignons, 2 onions, 2 cloves of garlic, 1 carrot, salt, pepper, herbs.
Preparation: Boil the lentils until soft according to the instructions and drain the excess liquid. Chop the onion and garlic, grate the carrots on a coarse grater, and chop the mushrooms into washers. Fry all vegetables in vegetable oil until tender, add lentils, a little stew and add chopped herbs with spices.
3. Cream soup of champignons and potatoes
The classic recipe for creamy mushroom soup, to which you can add cheese, herbs, croutons or other ingredients to taste.
You will need: 300 g champignons, 4 potatoes, 2 onions, 500 ml 20% cream, salt and pepper.
Preparation: Chop the onion finely, chop the mushrooms and fry them in butter until tender. Boil potatoes, drain and knead. Add mushrooms, spices and cream to it and grind everything with a blender. Bring the soup to a boil and serve.
4. Cheese soup with mushrooms
A fragrant soup with French notes will quickly become a household favorite.
You will need: 500 g of champignons, 1 onion, 30 g of butter, 30 ml of vegetable oil, 1.5 l of water, 200 g of croutons, 200 g of processed cheese, salt and spices.
Preparation: Fry chopped onion in vegetable oil, add mushrooms to it, salt and cook for about 15 minutes over low heat. Boil water, dissolve the processed cheese in it, and add the mushrooms 3 minutes after boiling. Boil for another 5 minutes, add butter and spices, and before serving - crackers and chopped herbs.
5. Olivier with mushrooms
An original interpretation of the classic homemade salad, but now with mushrooms!
You will need: 200 g of champignons, 4 potatoes, 4 eggs, 4 pickles, 1 carrot, 1 can of canned peas, mayonnaise.
Preparation: Boil carrots, potatoes and eggs and cut them into cubes. In the same way, chop the onion with champignons and fry until golden. Chop the cucumbers, mix the ingredients and season the Olivier with mayonnaise.
6. Champignons stuffed with vegetables
Unusual, tasty, colorful and completely vegetarian snack.
You will need: 6 large mushrooms, half an avocado, 1 tomato, 30 g of basil, 20 g of green onions, a pinch of sweet pepper, 1 tbsp. sesame seeds, 1 tablespoon soy sauce.
Preparation: Peel the raw mushrooms and carefully remove the legs. Chop all other ingredients finely, add garlic to taste and season with soy sauce. Stuff the mushroom caps and garnish with sesame seeds.
7. Mushroom champignon sauce with sour cream

You will need: 200 g champignons, 1 onion, 2 tbsp. flour, 20 g butter, 125 g sour cream, juice of 1 lemon, 2 bay leaves, a pinch of black pepper, 1 tbsp. chopped greens.
Preparation: Finely chop onion with mushrooms and stew until cooked in butter with a little water. Add flour, stir, bring sauce to a boil. Add sour cream, spices, bay leaf, lemon juice and herbs and stew a little more. Remove the bay leaf and beat the sauce with a blender.
8. Mushroom champignon caviar
An interesting recipe for those who are tired of eggplant and squash caviar.
You will need: 400 g champignons, 2 onions, 2 carrots, 4 tablespoons. vegetable oil, 2 tbsp. soy sauce, 50 g walnuts, 3 cloves of garlic, salt and spices.
Preparation: Cut the mushrooms in half and bake for 20 minutes at 180 degrees. Finely chop the onion and fry, add the grated carrots to it and cook together for 10 minutes. Grind all ingredients, including garlic and nuts, and season the caviar with soy sauce.
9. Champignons in cream
A simple independent dish of champignons in beautiful molds or pots.
You will need: 300 g of champignons, 60 ml of cream, 40 g of butter, 60 g of hard cheese, 2 yolks, a pinch of salt, pepper and nutmeg.
Preparation: Peel and cut the mushrooms into thin slices, fry in butter, stirring occasionally, for about 15 minutes. Divide the mushrooms into molds. Whip the yolks with cream and spices, pour over the mushrooms and cover with grated cheese. Bake for 15 minutes at 180 degrees.
10. Salad with beans and mushrooms
The salad is prepared in a matter of minutes, but guests will definitely be surprised!
You will need: 250 g champignons, 1 onion, 3 eggs, 200 g canned beans, 1 tbsp. mayonnaise, 3 tbsp. vegetable oil, salt and pepper.
Preparation: Cut the mushrooms into strips and fry until the moisture evaporates. Add the onion there in half rings and continue to fry until cooked. Boil and cut the eggs into strips, drain the liquid from the beans and mix all the ingredients with the spices and mayonnaise.
11. Pickled champignons
You can eat them right away or leave them in the refrigerator until tomorrow.
You will need: 1 kg of small mushrooms, 5 cloves of garlic, 1 tbsp. salt, 2 tbsp. sugar, 6 tbsp. vinegar, 50 ml of sunflower oil, 7 peppercorns, 3 bay leaves.
Preparation: Add chopped garlic, oil, vinegar, sugar and salt to a saucepan, add washed mushrooms and place on the stove. Bring to a boil and boil, covered for another 10 minutes. Transfer the mushrooms to a jar or container, add pepper and bay leaves.
12. Champignons in batter
A simple and quick beer snack or just like that!
You will need: 300 g of champignons, 125 ml of water, 1 protein, 3 tbsp. flour, 0.5 tbsp. starch, salt and spices.
Preparation: Beat the protein with salt, add cold water, and then flour and starch. Watch the proportions so that the batter has the consistency of thick sour cream. Wash and slice the mushrooms if desired, dip in batter and fry in plenty of oil.
13. Korean champignons

You will need: 300 g of small mushrooms, 0.5 tsp. coriander, 3 cloves of garlic, 10 g sesame seeds, 1 tbsp. soy sauce, 1/4 cup vegetable oil, 3 tbsp. apple cider vinegar, 2 bay leaves, 1 hot pepper, 1 bunch of herbs, 1 tbsp. cumin, salt.
Preparation: Add soy sauce, vinegar, spices, toasted sesame seeds, chopped herbs and garlic to the vegetable oil. Pour the washed mushrooms with marinade and leave in the refrigerator for 12 hours.
14. Champignons from Jamie Oliver
Spicy mushrooms with cheese are the perfect side dish or appetizer that is very easy to prepare!
You will need: 10 champignons, 1.5 cm chili peppers, 2 tbsp. chopped cilantro, 1 tbsp. lemon juice, 3 tbsp. olive oil, 30 g of cheese, salt.
Preparation: Chop garlic, peppers and herbs, mix them with lemon juice and olive oil. Roll the washed mushrooms in this mixture and leave for half an hour. Place small pieces of cheese in the mushroom caps and bake for up to 20 minutes at 200 degrees.
15. Champignon shashlik
Can be cooked over the fire, grilled or simply in the oven!
You will need: 300 g champignons, 2 tablespoons butter, 2 tbsp. soy sauce, 1 tsp. lemon juice, 0.5 tsp. paprika, 1 clove of garlic, chopped dill.
Preparation: Put the washed and dry mushrooms in a bag and fill with the marinade from all the other ingredients, mix well. Leave the mushrooms to marinate for half an hour, skewer and bake for 12-15 minutes at 200-230 degrees.
16. Champignons stuffed with chicken
Everyone knows chicken with mushrooms, but what about mushrooms with chicken?
You will need: 600 g champignons, 150 g boiled chicken, 1 egg, 1 onion, 1 tbsp. chopped greens, 4 tbsp. wheat groats, 200 g sour cream, 50 ml of white wine, 1 tsp. granular mustard, 150 g of processed cheese, salt.
Preparation: Separate the legs from the champignons and chop them finely. Fry wheat groats for 4 minutes, pour boiling water over and boil for 10 minutes. Cut out slices from the processed cheese to the size of the caps, and chop the trimmings with herbs, chicken and onions.
Mix it all with cereals, mushroom legs and an egg, add spices, fill the caps and put pieces of cheese on top. Put the hats in a mold and cover with sour cream, mustard and wine. Bake for 15 minutes at 180 degrees.
17. Champignons with beets
A rare combination will immediately attract attention even on a festive table.
You will need: 10 large mushrooms, 1 onion, 2 cloves of garlic, herbs, salt, pepper, 3 tbsp. vegetable oil.
Preparation: Separate the legs of the mushrooms and cut them into small cubes with beets and onions. Add spices and crushed garlic to the oil. Fill the caps with the filling and the garlic oil on top, put on parchment and bake at 200 degrees for 10-15 minutes.
18. Warm salad of champignons and zucchini
The salad is very nutritious, but fresh and light.
You will need: 300 g of champignons, 300 g of zucchini, 1 onion, 0.5 bunch of lettuce, 5 sprigs of parsley, salt and pepper.
Preparation: Cut the champignons into washers, the onion into half rings, and the zucchini into half circles. Saute the onion and add the mushrooms to it until the liquid evaporates. Fry the zucchini separately, mix with the mushrooms, put it all on lettuce leaves and garnish with herbs.
19. Champignons in honey-mustard marinade
A new take on the common pickled champignon appetizer!
You will need: 600 g champignons, 2 tsp. honey, 1 clove of garlic, half a lemon, 1 tsp. hot mustard, 2 tsp. granular mustard, 3 tablespoons vegetable oil, spices.
Preparation: Pour the mushrooms with salted boiling water and boil for 5 minutes after boiling, drain the water. Mix honey with mustard, add oil and lemon juice, crushed garlic and spices. Stir the marinade and pour over the hot mushrooms. Put it in a jar, and when it cools down, put it in the refrigerator for at least 6 hours.
20. Salad with raw mushrooms and bell peppers
Raw mushrooms in dishes have a completely different taste.
You will need: 120 g champignons, 60 g bell pepper, 1 red onion, 4 tbsp. 9% vinegar and vegetable oil, 2 tbsp. soy sauce, dried garlic, oregano, salt.
Preparation: Cut the peppers into strips, the onions into the feathers and the mushrooms into thin slices. Pour half the vinegar and half the oil on the onion, and let it sit for 10 minutes. Add it to the vegetables, mix with the spices and top up with the dressing made from the remaining oil and vinegar.
